Title: Sweet and Sour Pork (Japan)

Yield: 1 Servings

1/2cSugar
4tbCorn starch
1/3cVinegar
6tbSoy sauce
1 2/3cWater
2lbLean pork, cubed
  Shortening for frying
1 Green pepper, sliced
1 Onion, sliced
1cCubed pineapple
2tbOil
  Hot cooked rice.

Mix sugar and 2 tablespoons corn starch in saucepan. Add vinegar. 2 tablespoons soy sauce, and 2/3 cups water. cook stirring constantly, until mixture thickens and comes to a boil. reserve. Simmer pork in 1 cup water in saucepan for 30 minutes. drain, cool. Blend remaining cornstarch and soy sauce. Mix with pork, fry pork in deep fat at 380 degs until brown. Drain on absorbent paper. Suatee green pepper, onion and pineapple in oil in suacepan. remove, drain. Combine meat, vegetables mixture and reserved sauce. Reheat. serve with hot cooked rice. 3-4 servings.
